My new favorite lunch meal was just invented! It would be perfect with a salad, though we didn’t have that today. Pepperoni chicken breasts with cheese. My husband created this recipe today when our pantry was low, but it is a recipe perfect for Keto or even Atkins (beyond stage 1). And it was delicious! This super simple entree was done in just a few minutes, and the best lunch I have had in a long time!
Pepperoni Chicken Breasts with Cheese and sliced tomato= Delicious!
He took two boneless chicken breasts (thighs would have worked, too) and treated them lightly with a spritz of olive oil, seasoned with sea salt and Mrs. Dash. Then he put them on a pan, laid pepperoni slices all over the surface, and cooked for about 20 minutes. 400 degrees, he said. Probably could have reduced that cooking time five minutes, but it was darned good, so who am I to say? My husband suggested Turkey Pepperoni for those who don’t do pork.
Next he sliced fresh tomato over that, with a pinch more sea salt and pepper,cooked for another ten minutes or so. When close to done he sprinkled grated cheese generously over top of all and melted till bubbly and melty with just a hint of toasty brown. The cheese he used was a pre-grated four cheese blend. The Wal Mart brand version of Mexican cheese blend, but you could use any kind you desire! He says next time he is going to season with Rosemary, and I can’t wait! If doing this with dinner, I would definitely pair with a nice white wine!
