Down&Dirty Skillet Stroganoff

So, I got up this morning thinking I did NOT want a burger or any sandwich for lunch. And as I looked in the fridge, I realized I had a big pack of beef already cut for fajitas that needed to be used ASAP! I had thought about making Beef Stroganoff with it when I took it out of the freezer on Monday. That suddenly sounded like a great lunch idea to me! And my Down&Dirty Skillet Stroganoff was born!

In a very large skillet, I drizzled about a tablespoon of Olive Oil and put on high heat. I dropped in the beef, about two pounds, and added sea salt and pepper. I separated the slices of beef and stirred them around so all sides browned. Next, I dumped about half a bottle of good red wine in the pan and started looking through the fridge again.

I found a couple of tablespoons of chive and green onion cream cheese, and about six ounces of plain cream cheese…dumped them both in the pan and stirred till melted. After that, I added some Worcestershire and about 3 cups of water. When everything was bubbling fast, and smelling delicious, I dumped in a half bag of wide egg noodles and stirred them in. Once the noodles were almost done I lowered the heat to medium and added 12 ounces of sour cream.

If you are doing Keto or limiting gluten, substitute riced cauliflower for the noodles in this Down&Dirty Skillet Stroganoff.

This is one great way to use leftover wine, I have to say! The alcohol cooks out, but it leaves such a rich flavor in the sauce! Best lunch and supper I have had in a while! I used a 2018 Malbec that I had in the fridge, but any good red would work. A lot of recipes call for white wine, and I have used White wine before, as well. But I have to say, simmering the beef in this delicious red was the right move! Total cooking time was less than 20 minutes.

And leftovers for the next few days, too! Mushrooms would have made this perfect, but I realized the can of sliced ‘shrooms I thought I had was already eaten. But will definitely go in the next pan! I did dump in a drained can of water chestnuts to use them up. Didn’t hurt a thing.
